BLT Pasta Salad

A BLT incorporated with pasta?! Enough said. Needless to say, there were no leftovers. The dressing and ingredients in this side dish went together perfectly. This is the side dish of the summer and sorry friends and family, it's what I'm bringing to all the cookouts!



Again, forgot to take a picture of the dish so this is the next best.


Ingredients:


Dressing:

-1/2 C plain greek yogurt or sour cream

-1/3 C mayo

-2 TBSP buttermilk

-1 C fresh basil

-1/4 C fresh chives (chopped)

-1/2 C fresh cilantro

-2 TSP Worcestershire

-1 TSP garlic powder

-1 TSP onion powder

-Salt + pepper


Salad:

-1 LB short cut pasta

-1 C cheddar cheese

-1 head romaine lettuce (shredded)

-2 C cherry tomatoes (halved)

-2 C grilled corn

-8 slices cooked bacon (crumbled)

-1 avocado (diced)


Instructions:


Dressing:

-Combine all ingredients in a blender and blend until smooth

-Season with salt and pepper


Pasta:

-Bring a large pot of salted water to a boil

-Boil the pasta to al dente and drain

-In a large bowl, toss together the hot pasta with dressing and cheese

-Mix in the lettuce, tomatoes, corn, bacon, and avocado

-Serve warm or cold. The longer it sits the more flavor it develops!
